Healthy On - The - Go Breakfast Cookies


These breakfast cookies make for a delicious and kid friendly start to the day or a healthy snack any time. They are a lunch box favorite and a great way to use up those over ripe bananas sitting on your counter and the best part is they only take 20 minutes to make!


Ingredients:

1/4 cup maple syrup OR honey

1 tsp vanilla extract

2 medium ripe bananas, mashed

1/2 tsp salt

1/4 tsp cinnamon

2 1/4 cup oats

3/4 cup mixed nuts, dried fruit, or raisins

1 tbsp chia and/or flax seeds


Mix all the ingredients together, scoop onto a baking sheet and cook at 350*F for about 10 minutes.


The best thing about these cookies is that they are easy to customize, shredded apple or carrot make a great addition for sneaking more fruit to picky eaters.
