"Muffin Man Muffins"

Named by my 3 year old, these are a family favorite and a great way to sneak some extra veggies into your diet.


Ingredients:

  • 2 cups flour

  • 3/4 cup sugar

  • 2 tsp. baking soda

  • 1/2 tsp. salt

  • 1 tsp. cinnamon

  • 1 tsp. nutmeg

  • 3 eggs

  • 1/2 cup coconut oil, melted (you can use vegetable oil)

  • 2 tsp. vanilla

  • 2 cups grated carrots

  • 1 cup apple, peeled and grated

Directions:

  1. Preheat oven to 350*F

  2. Mix the eggs, sugar, vanilla, and coconut oil well

  3. In a separate bowl mix the flour, baking soda, salt, cinnamon, and nutmeg

  4. Add the dry ingredients to the wet and stir, careful not to overwork the batter

  5. Add the apple and carrot and stir

  6. Put in lined muffin tins and bake for 14 to 18 minutes turning half way

These muffins, like all of our recipes can be customized to suit your taste. Nuts or chocolate chips make a great addition. These freeze well and reheat perfect in the microwave so you can make ahead for a quick grab and go snack.
