Omelet Cups


These are a great way to start your day or a perfect mid morning snack. Omelet cups are freezer friendly and reheat well.



My favorite thing about omelet cups is that there really is no set recipe. You can add whatever you like but we've listed some suggestions below.


Filling (Suggestions):

  • Mushrooms fried with diced onion

  • Grated cheddar cheese

  • Bacon bits (fried)

  • Ground sausage

  • Chopped spinach

  • Chopped red pepper


Omelet:

  • 8 eggs

  • 1 cup milk or water

  • 1/2 tsp salt

  • 1/2 tsp pepper (or to taste)


Directions:

  1. Prepare your filling and mix together in a bowl.

  2. In a separate bowl mix the eggs, milk, salt, and pepper well

  3. In a greased muffin pan (silicone liners are optional but make clean up easier), add 1 to 2 tbsp of the filling mixture to each cup and then top off with omelet mixture to fill the cups.

  4. Bake at 350*F for 8 to 12 minutes
